This Labor Day – take something a little eclectic to the picnic. Huffington Post shares a delicious Quinoa and Smoked Tofu Salad that will smash that mayonnaise-covered potato salad off the table (and your hips).
Quinoa, an ancient Peruvian grain, is packed with protein, oleic acid, calcium, and pretty much five thousand other whole-body healthy benefits. No wonder the Food and Agricultural Organization of the United Nations declared 2013 as “The International Year of the Quinoa”.
Take out the shopping list because you’ll need some grape tomatoes, mint, cucumber, parsley, and some baked smoked tofu.
