Summer's hottest skinny Watermelon Cocktail recipe
Sometimes you want a vacation in a glass, but fruity cocktail many times means tons of calories. I was recently at a Mexican restaurant a few days ago and saw a delicious looking jalapeño margarita – I love a spicy kick. I created this low-cal drink using fresh ingredients to kick away those winter blues!
I, instead, had a virgin watermelon drink since I am 8 months pregnant but I thought it would be perfect to combine the two of these together for an a great cocktail. Who said drinking is not entirely healthy? By having just one wedge of watermelon, we are able to intake 33-39% of your daily Vitamin A and C and 5% of your fiber. In addition, 1 cup of watermelon has only 46 calories. Cheers!
Serving: Approximately 1 pitcher
Ingredients:
5 cups, Chilled watermelon cubes
2 limes, wedged
Handful of Mint leaves
1-2 jalapeño peppers, deseeded and chopped finely
2 cups of club soda
12 ounces Liquor, approximately (Gin, Tequila, Rum)
Simple Syrup, if desired for added sweetness*
Ice Cubes
Directions:
- Puree chilled watermelon cubes in a blender. (It can be strained if you like but I prefer the pulp).
- In a pitcher, muddle the lime, mint and jalapeños.
- Add the watermelon puree, liquor, club soda and simple syrup, if desired.
- Serve over ice and garnish with mint.
*To make simple syrup. Mix two parts sugar to one part water. Bring to a boil in a saucepan until sugar is dissolved, stirring constantly. Once dissolved, remove from heat and allow to cool completely.
