Recipe: Local Summery Peach & Arugula Salad with Radishes, Pistachio Mint and Feta
Summer is wonderful especially when it comes to the supermarket – with the endless varieties of fruit and vegetables. It’s the peak of the season for some of my favorite ingredients and one fruit that can be found almost anywhere this time of year are big plum juicy peaches, a family favorite at my home. They are low in calorie with only 40 calories for a medium peach and loaded with antioxidant Vitamin C.
Peaches are always great for an afternoon snack but why not include them in a yummy salad? This recipe combines spicy arugula with sweet peaches and is complemented with crunch radishes, creamy feta, mint and pistachio. The best part - no cooking is involved...just chop and toss together.
Serves 2
Ingredients:
3 to 4 Cups Baby Arugula
1 Organic Peach, sliced
½ Cup Radishes, chopped
6 oz. Traditional Feta Cheese
¼ Cup Chopped Pistachios
Handful Chopped Mint Leaves
Olive Oil
Salt and Pepper to taste
Directions:
1. Toss Arugula, sliced peach and radishes with a few tablespoons of olive oil in a bowl.
2. Crumble the feta and add to the salad. Top with pistachios and mint leaves.
3. Season with salt and pepper to taste. Serve.
